You've probably heard the phrase "baking is a science". A lot of people think that this means that you have to follow recipes perfectly or you'll get an inedible mess. 

But you can also think of it in a more fun way. There's a YouTuber called Nile Red. He does a ton of real science! When he wanted to make purple gold, he took all of the recipes he could find. He tried following them as best as he could, but it wasn't going exactly right. So he winged it! And he ended up with his purple gold ring. 

When you know the basics of what's going on, you can tweak recipes as you go along. My signature Kool-Aid cookies were nothing like the original recipe! The original recipe was just really brightly colored sugar cookies. I wanted to make pale colored domes that had a dry texture. I had an idea of what I wanted... And I went for it! I changed one thing at a time to see what made me happy and just tried again and again until they were perfect! (I have no idea if I still have the hand written recipe in my recipe drawer - I haven't made those in over a decade.)

A big warning though. You can't trust recipes the way that you used to. There are places you can be guaranteed that you'll be getting a flawless recipe that you can follow perfectly with no hitch. But this is the Internet - anyone can post anything to their personal website without any oversight. 

As lovely as it was, the first mochi recipe I tried almost killed my poor mini stand mixer. I had to go to the KitchenAid site to figure out how to make stand mixer mochi without damaging the mixer! The first recipe was great, except for that one crucial step. 

If you're looking at recipes online without going through institutions like America's Test Kitchen, you gotta be willing to look at several recipes and cross reference them.

This willingness to cross reference is more important for someone like me who just can't have certain things. For the peanut butter fudge moon cake inspired cakes, I had to ask my mom for her method of starting microwave peanut butter fudge and I needed to look up vegan egg washes. 

Baking can be really frustrating and that's why people can take "baking is a science" as "follow every step down to the milligram and do not look at it funny". For technical stuff, yeah. Definitely. You can't stray far from a macaron before it's just a lump of sad egg whites. (Seriously, I just won't even think of the concept of meringue now.)

But for fun things? Fun things, you can throw everything at it as long as you have a vague idea of what you're doing. And you can end up with results way better than you imagined... They're just nothing at all like the recipe!
