I'm actually not really allowed to cook for myself. I love it, but I'm aware that I really shouldn't. 

My mom didn't make a rule banning me from cooking! It's not that kind of situation. Doctors have directly told me that I really, really shouldn't because there's a risk of me having a seizure and hurting myself or starting a fire. Same reason I can't go swimming anymore. I might have a seizure and drown. That would be really, really bad. 

So I need my mom's help to cook just to make sure nothing bad happens. 

I have so many ideas for stuff I want to do! One of the things is moon cakes... Which I will mess up way too often and call moon pies.

The reason I we bought moon cake presses in the first place was because we were getting into making mochi and I remembered snow moon cakes. We haven't tried them yet because there's just so little time for cooking and I'm recovering from Thanksgiving. (I can only have special vegan baked goods, and that's still enough to mess me up for a long time.)

In all likelihood, by time time this is posted, I will have made many failed moon cakes. But it's scary to make new things. So I discussed it with my mom, and we're going to try to make mini pecan pies with the moon cake dough as the crust. We could buy premade crusts and thaw them to make the crusts. We could cut flour with vegan butter and make the crusts. But both of those sound more difficult than making a dough with oil.

When I was big time baking all the time, I adjusted my recipes to make them easier. One of the biggest substitutions I loved was replacing butter with oil. Not because I was vegan then - no, I was definitely not vegan. It was just because butter is annoying. Oil is much easier to use because you're not worried about how cold the butter is, you're not needing to cream it with the sugar... You just use it. (Note: I never tried to make buttercream with oil. I'm pretty sure that would make a mess.)

There's a lot of stuff that using butter correctly in baked goods does. Vegan butter is decent enough that no one would know there was a substitution. I know all that because I loved technical cooking shows like America's Test Kitchen.

So, we're going to try and make a pecan pie with oil in the crust instead of butter because that's way easier. It's just lucky that there's a lot of good recipes for that specific kind of crust out there. If it goes well, it will inspire us to actually make a filling and try out those moon cake presses. I feel like that will be a lot of fun and make very cool little cakes!
