Okay that was a cute send off for this project, but uh... My math was insanely off and I have no idea how I got it so wrong. I thought I just needed twenty more sections. Because 20 + 20 is fifty, right? I thought I'd get to 11,000 and be good. Nope, I gotta get to 16,000 to go along with the other stuff I had already written. Whoo! What a blunder!

Thankfully, I was really nervous about switching to the fiction section and I don't want to do actual work. 

So I was talking a lot about fruit, but allow me to complain about eggs.

I love eggs. I love fried eggs, boiled eggs, omelettes, deviled eggs, I could go on and on. I'm also deathly allergic. Just straight up I cannot eat what may be my favorite food. 

I really don't care about dairy that much. There's decent replacements for everything dairy. But there's just no good replacement for eggs.

One of the most disappointing food mishaps I've experienced was Peggs. They may have changed their recipe by now as this happened a long time ago. The thing about Peggs was that they didn't have them available on their site like... Ever. You had to jump through hoops and wait around and hope you got in at the right time. Even now, I went on the site to see if I should give them another chance... And the link that says "Buy Peggs" leads to an error saying it can't access the page.

So I wasn't sure when I'd be able to get more. They were okay. They were fine. The texture was way off, but it was okay. 

They claimed you could use Peggs for baking. Well... Have you ever had a garlic flavored pumpkin pie? 

I was so excited for these magical egg substitutes that would let me bake anything I wanted. No. My pumpkin pie tasted like garlic.

Maybe perhaps tasting like garlic isn't the correct phrasing. There was an overwhelming savory overtone that when paired with pumpkin spice made a very distinct garlic taste.

And I do get it. Eggs have a sulfuric taste. It would be annoying to need to buy and mix in that Indian sulfur salt every time you want to make an omelette. But they were advertising that you could use them for baked goods.

If I didn't love eggs so much, it wouldn't be as disappointing. I know there's no universal substitution for eggs and anyone who says there is just a bit misguided.

But I'm saying that as someone who has been vegan for quite a bit right now. It's less easy to accept that when you're new to all of this and just want a darn boxed cake mix cake! There's even that rumor that you don't even NEED the eggs! I wish that rumor was true and the eggs were just there for the giggles. But darn it, those mixes need some kind of an egg substitute....
